[subject] + 对 + [noun] + (很) + 感兴趣
[subject] + 对 + [noun] + 不 + 感兴趣
[subject] + 对 + [noun] + 有 / 没有 + 兴趣
对 + topic + 感兴趣 says someone is interested in the topic. The thing you're interested in goes after 对, in front of the verb – where English has it trailing after "in".
感兴趣 is literally "feel interest": 感 is the verb and 兴趣 the noun. Degree words go in front of 感: 很感兴趣, 特别感兴趣.
感兴趣 takes no object, so the topic has to go after 对. And 兴趣 is a noun: without 感 or 有 there is no verb.
对…有兴趣 says the same thing with 有 "have". The negatives follow the verb: 有兴趣 becomes 没有兴趣 or 没兴趣, and 感兴趣 becomes 不感兴趣.
To ask what someone is interested in, the question word goes after 对: 你对什么感兴趣?
